The Half Shell Oyster Bar was founded in 1968, and became a family affair. It was run by Danny and his three children – Candie, Deborah, and Ali. It became a dream come true for the owners. A crowded, gimlet-eyed Dan and the staff were all happy to work and play together. But the business eventually went sour. After the pandemic, the restaurant’s owners had no choice but to shut down the New York landmark.

But Sandy Ingber, executive chef at the Oyster Bar, touted the restaurant’s reopening in a press conference held by City Hall last week. But Ingber said the restaurant will reopen at full capacity. “We are so thrilled to be able to serve the public again,” he said.

While the Oyster Bars are a New York tradition, they’ve become more difficult to come by. More than 70 New Jersey and Connecticut restaurants now throw their leftover shells into the harbor, putting their reputation at risk. But one oyster cart remains on the street. The Billion Oyster Project is a nationwide initiative that collects the discarded oyster shells. The discarded shells, along with the money they generate, anchor new reefs in the waters around Manhattan.

Despite the dangers, New Yorkers continued to enjoy the oysters. In 1927, the Billion Oyster Project was founded by Malinowski, an aquaculture teacher at the Harbor School. Students learn to design reefs and monitor water pollution. They also grow and operate boats. They are the future of the industry.
